SLAUGHTER HOUSE
Photo essay at Slaughter house in Poth Texas, a small Polish farming community downriver from San Antonio Texas. The South Texas brush country has traditionally produced some of the best grass fed animals in the United States but the mining of oil by way of fracking in the Eagle Ford Shale is threatening this way of life as well as the nutrient and chemical makeup of our meet. This essay resulted from me asking my friendly farm to market farmer Fred Lyssy if I could photograph my beef being butchered. I wanted to face the truth if I was going to continue to eat meet. The truth slapped me silly on this one. This is part of an ongoing series I have been working on in the ungulate "industry". Let me know what you think.
